The Cellars of Santa Vittoria chose to enhance the qualities of the Piedmontese vines by producing single grape variety wines. A vast range of wines is offered: from Roero Arneis, the white of Alba par excellence, to Nebbiolo d’Alba, from Barbera d’Alba to Moscato d’Asti, and Arnus, fruit of the best arneis grapes from Castellero vineyard, in the village of Piobesi: grapes, harvested by hand in 25 kg baskets, are brought into the cellar and vinified at 18°C. From slow refinement on the noble lees, a white wine with great character and able to gain complexity over time, is obtained. The yearly production is limited to 7,000 bottles.
With the 2004 harvest, Nebius entered production. It comes from careful selection of nebbiolo grapes found in Ulivi di S.Vittoria vineyard. The must, vinified in stainless steel tanks, stays in contact with the skins for approximately 10-12 days. After alcoholic fermentation is completed, malolactic fermentation is carried out in stainless steel tanks; afterwards, wine refines in stainless steel tanks, and thanks to the skilful use of oxygen, it is maintained fresh and fruity. Since 2005, there are 7,000 bottles available of the cru Nebbiolo of the Cellars of the Castle. Roero Arneis distinguishes itself for its delicate floral bouquet and light straw yellow colour; an enjoyable wine with an almond finish.
Barbera d’Alba impresses for its bright red colour and its scents of small red fruits perfectly proportionate with the pleasant vinous fragrance. Balanced, persistent and harmonious in the mouth. Nebbiolo d'Alba, thanks to vinification in purity and refinement on fine lees, shows the elegant proportions typical of this variety. Moscato d’Asti has a fruity bouquet where yellow peach especially stands out, enjoyable fizziness in the mouth and good acidity. Ideal to close a meal, it pairs nicely with cakes and pastries.
